Elevate your evening at Fairmont Empress’ Sunset Sips experience

Immerse yourself in an elevated and enriching evening at the iconic Fairmont Empress in downtown Victoria!

After a highly successful launch last year, they’ve once again opened up the luxuriously elegant ‘Sunset Sips’ experience in the Lobby Lounge, and Victoria Buzz had the pleasure of experiencing its wonder firsthand.

Drawing inspiration from their afternoon tea service, this offering is a twist on tradition that presents cocktails and mocktails in glass teapots—giving guests a taste of the glamour associated with the roaring 20s in Victoria. 

From the floor-to-ceiling windows, atmospheric lighting, masterfully crafted menus and extraordinary table service, they’ve indeed captured the essence of spirited sophistication.

“We are thrilled for the second season of Sunset Sips,” said Maeve Fogarty, Tea and Wine Sommelier at Fairmont Empress. 

“The positive feedback we received from our guests inspired us to continue pushing the boundaries of mixology, allowing us to offer a truly unique experience. We have everything from bright and tart flavours to sharp and smoky.”

Signature cocktails include ‘Tiffany’s Breakfast’, a chamomile tea-infused breakfast martini featuring Empress 1908 Oaken Gin, mixed with marmalade and garnished with dehydrated oranges.

This cocktail pays tribute to the disco ‘Tiffany’s’, which are said to have resided in the basement of the hotel during the 70s.

Another highlighted cocktail is ‘The Capone’, a gunpowder green tea-infused Canadian Club, blended with Makers Mark and Maple bitters, served with classic cola and a plume of smoke. 

The menu also presents wondrous towers of appetizers prepared by Chef Steven Fernandes and desserts crafted by Executive Pastry Chef Gerald Tan.

Culinary delights include heirloom carrots with whipped tofu, albacore tuna tiradito, locally smoked and candied salmon, and slow roasted prime rib Yorkshire pudding. 

Tan presents his raspberry profiterole, banoffee pie and mouth-watering dark chocolate espresso mousse—served in an exquisitely crafted chocolate teacup.

Bring a loved one, and together you can watch the sunset over the Inner Harbour as the Lobby Lounge transforms into a glowing haven.

This service is offered Thursday through Sunday from 7:30 p.m. to 11 p.m. Bookings are $48 per person—you can view their full menu and reserve your table online.
